Mme. Kamman specifically rails, in one of her books, against &lt;i&gt;undercooked&lt;/i&gt; beans or vegetables of any kind. She says the &amp;quot;tender-crisp&amp;quot; fad did not do justice to what a beautifully cooked vegetable can be.
